Diet Day 2 : Laziness, please go away …

So here is the promised documentation of my diet.

Well, I missed breakfast today. I was still sleeping. I only woke at about 11am. *sheepish grin*
So by the time I got settled in front of my computer, poking through my emails, scrolling through facebook and some websites, it was 1.30pm. Time really flies when you’re having fun.

Anyhow, enough of the mindless banter… here goes …

Weight : 59.0 kg

So I have gone back to 59.0 kg! ARGGGHHH!!!
I would love to blame it on PMS and water retention. But anyhoo …

Breakfast
Nothing

Lunch
1 Bah Zhang

Tea Break
1 multigrain roll
1 boiled hotdog

Dinner
1/4 Chicken (Breast/Wing)
1/2 bowl rice

Fluids
2+ cups of water
1+ cup of PowerVeggies juice

Exercise
30 mins Strength Yoga

Jar Salads

While poking around my emails, I came across this interesting article about Mason Jar Salads. They look really pretty, don’t they?

Apparently, they keep longer and the lettuce stays crisp so we can prepare them ahead of time. Great for folks with busy schedules and are dead tired by the time you come home from work each day. It’s all part of the “lifestyle of convenience”, I guess. If you’re wondering how to do it, here are a couple of starter tips :

1) Start with clean wide-mouth jar that is completely dry. Moisture doesn’t work well with crisp lettuce.
2) Tear, don’t cut lettuce, as the cut edges will turn brown. (Something new to me, the noob cook!)
3) Place a folded paper towel at the top of the salad, just before the lid goes on and it will absorb some of the excess moisture and keep the greens more crisp. (This works well with bread too. If I pack a sandwich, I’ll wrap it in a kitchen paper towel so the bread doesn’t turn soggy.)
4) Avoid strong odors (egg, blue cheese, fish, raw onion, etc), as mentioned above. Bring them in a separate baggie if needed.

For the actual salad, the layers should go down like this :

1) Bottom layer is dressing or other wet ingredient. This is of utmost importance! You need to keep the dressing away from the lettuce to keep it from getting soggy.
2) Second layer needs to be a hearty vegetable like tomatoes, peppers, cucumbers, etc. Think about veggies that would taste good marinated in dressing. You will need a good amount of these vegetables to keep the dressing and lettuce separate.
3) Third layer is proteins or grains. This could be eggs, beans, rice, quinoa, pasta, etc. Next add the lettuce or greens.
4) Last you would add seeds or nuts. I would also add crumbled bacon to the last layer.

If you’re thinking ziploc bags or plastic containers work just as well, hold on! The reason mason jars work so well is they give the height to keep the two separate. Also, the ingredients tend to stay fresher in glass jars. Glass jars, where to get them? From the local sundries shop, Daiso or even Ikea!
