Stir-fried Long Beans With Egg

I decided to whip this dish up after having some leftover egg and long beans from other dishes I prepared. Surprisingly, it was super easy to cook. In fact, I would think it is one of the easiest vegetable dishes I have ever cooked. Certainly a dish for newbies to try out!

TOTAL TIME REQUIRED : Approx. 20 minutes / Serves 2
PREP TIME : Approx. 15 minutes
COOKING TIME : Approx. 5 minutes
 
INGREDIENTS :

  • 1 garlic clove, chopped
  • 125 g Chinese long beans (or snake beans), cut into 3cm-lengths
  • 1 egg, lightly whisked
  • sprinkle of salt
  • 1/4 tsp ground white pepper, to taste
  • 1 tsp soya sauce, to taste
  • 2 tbsp cooking oil

 
INSTRUCTIONS :

  1. Heat cooking oil and stir-fry garlic over high heat.
  2. Add long beans and a sprinkle of salt.
  3. Cook for 1-2 minute.
  4. Pour eggs into the wok over the long beans. Quickly stir-fry for 30 seconds. Break any egg lumps with spatula.
  5. Season with pepper and soya sauce.
  6. Remove from heat.
